Makdous or maqdous? Everything about the Levantine eggplant dish
Makdous and maqdous are the same dish: baby eggplant stuffed with walnuts and pepper, preserved in olive oil. Only the pronunciation differs.
Origin of the name
From the Arabic root "kadasa", to stack, because the eggplants are stacked in jars. Syrians and Lebanese say makdous; Jordanians and Palestinians often say maqdous.
What makes Jordanian makdous special?
A generous walnut and red pepper filling and Jordanian olive oil.
How to eat it
At breakfast with taboon bread and tea, or as a mezze.
