What is makdous, and what makes ours different?

Makdous is a traditional Levantine and Jordanian dish: small local eggplants are boiled, salted and pressed to remove their water, then stuffed with walnuts, red pepper and garlic and cured in olive oil for weeks. At Bathenjan a Jordanian mother makes it at home the old way, and you choose your filling: skip the hot pepper, or add extra walnuts.

Why Bathenjan makdous?

Because it isn't factory made. Every batch is prepared at home in small quantities, using the same family recipe made for years.

From a Jordanian mother's kitchen to your table

It started as the family pantry. Every eggplant season, neighbours and relatives asked for a jar of mum's makdous, until the demand outgrew the kitchen. That's how Bathenjan was born.
